Definition
The pressure of the fuel/air mixture inside the engine's intake manifold, measured against a vacuum reference rather than against the surrounding atmosphere. In a piston aircraft engine, manifold absolute pressure indicates how much air is being delivered to the cylinders and is therefore a direct measure of engine power output. It is displayed in inches of mercury ("Hg) on the manifold pressure gauge in the cockpit.
Plain English

Why Pilots Care
It tells the pilot the actual power output available and must be monitored to prevent engine damage from overboost or to set correct power for climb, cruise, and descent.
Analogy
A tire gauge usually shows pressure above outside air pressure. MAP is different: it is measured from zero pressure, so a stopped engine can show roughly the same pressure as the outside air instead of showing zero.
